About us

The origins
of La Resistenza

Born in the late 1800s as a historic butcher shop in the heart of Porto Azzurro, this ancient workshop found new life in 2022, when Marco and Daniela, the daughter of the former butcher's owner, took up its legacy and transformed it into a refined meat restaurant overlooking the island.

Alongside them is Clemente, chef and grill master, in a project united by one great passion: the quality of meat and the excellence of cooking.

The technique

The technique

Grilling without
open flame.

Clemente's secret is simple: never direct flame on the meat. Only radiant, even heat - the perfect Maillard reaction.

Open flame burns the fat, alters the aromas, masks the authentic flavor of the meat. Our grill instead creates that golden crust that locks the juices inside.

  • Cooking calibrated for each cut and thickness
  • Post-cooking rest - juices redistribute
  • Salt and pepper: nothing more, to respect the raw material
